Here is the recipe for my favorite Christmas cookies, Muddy Snowballs!


RECIPE INGREDIENTS:
Cookies
1 cup (2 sticks) unsalted butter, softened
2 ounces unsweetened chocolate, melted and cooled
2/3 cup confectioner's sugar
1 egg yolk
11/2 teaspoons vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped walnuts

Dust
3/4 cup confectioner's sugar
3 tablespoons unsweetened cocoa powder
1. In a large bowl, using a wooden spoon, cream the butter until smooth. Stir in the melted chocolate and blend well. 2. Add the 2/3 cup of confectioner's sugar, egg yolk, and vanilla extract and stir until combined. Stir in the flour and salt until smooth. 3. Add the walnuts and stir until combined. Cover and refrigerate the dough for at least 1 to 2 hours or until it is firm enough to roll into balls. 4. Heat the oven to 350. Form scant tablespoonfuls of the dough into 1-inch balls. Place the balls on two ungreased baking sheets, leaving about 1 inch between them. Bake for 10 to 12 minutes or until the tops of the cookies are set. Cool on the baking sheets for about 3 minutes. Repeat until all the dough has been used. 5. Meanwhile, stir together the 3/4 cup confectioner's sugar and cocoa powder in a shallow bowl. Carefully dip the warm cookies into the dust (that is, throw them in the mud) to coat. 6. Cool the cookies completely on a wire rack. Roll again in the cocoa-confectioner's sugar dust. These snowballs don't need refrigeration -- just store in an airtight container. Makes about 4 dozen Muddy Snowballs.

How was everyone's Thanksgiving?

I hope everyone had a Happy Thanksgiving and survived Black Friday! We spent Thanksgiving with all our family at my mother's house and had a great time. I'm not sure I have ever been so stuffed! I stayed up late Thanksgiving night and was able to get some great deals online for Black Friday at Toys R Us and Wal-Mart.

My email was hacked!!

I was enjoying the evening with my family and decided to check my emails after my kiddos went to be. I was shocked to find that there were hundreds of bounced email notices in my inbox from strange email addresses. I checked my sent emails and at least a thousand spam emails have been sent from my email account and all my current messages were being forwarded to some strange Yahoo email address. My internet tech help is closed until the morning but I was able to change my password so I hope that will keep them out of my account. If anyone recieved spam email titled Let's Share the Blessing from my email address I am so, so, so sorry!!! Has this ever happened to anyone else?

Fabulous Fall

I can't believe how fast the weather is changing here. The temperature went from the 70's last week to the 50's this week. The foliage is beautiful right now. It's going to be a fantastic Halloween this year.

Three weeks ago I had a miscarriage. I'm heartbroken. I've taken some time off from my blog but am starting to feel better and will try to post more often.

Excited and A Little Scared!!

As you might have guessed by the new button on my sidebar I have recently found out we are expecting a new bundle of joy! Talk about a big surprise!!! I found out about a week and a half ago and I'm just now getting over the shock. I'm so nervous about this pregnancy! My three kiddos were all born premature and I spent substantial amounts of time on bed rest and in and out of the hospital with each one. I'll be sure to keep everyone updated on how we are doing!

Is This Really August!

What an amazing week! I can't believe how perfect the temperature has been here! Everyday was in the low to mid 80's. I can't believe this is really August. How's the weather been where you are?

Rain, Rain GO AWAY!!

I can't believe it's rained so much here recently! While it's been nice having some extra days off we have lost so much income from our small business. )-: It looks like tomorrow is clear so it's back off to work but then they are calling for rain again Wed. UGGH! Every summer it's either to dry or to wet. On the bright side at least everything is still so green and beautiful this year!

Ouch!!

While working with my husband today I was trimming a small patch of grass near the parking lot of a resort we take care of. There was apparently a broken glass bottle hidden in the grass and when my trimmer hit it a large piece of glass flew up and cut my leg. Ouch!!The cut was pretty deep and wide. As a former nurse I know it probably needed a few stitches but I was trying to be tough and had him drive my to the pharmacy for the butterfly bandages and cover. It's been so tender tonight. If it's not feeling a little better by tomorrow I'm going to have to give in a go to the doctor. We are so busy right now. This is a horrible time to have to be slowed down with an injured leg! Here's to hoping I heal quickly.

I hope everyone has been having a great summer! I've been really busy working with our small business. The work is hard but the great news is I lost 20 lbs so far. I'm finally fitting back in all my prebaby clothes! Has anyone taken any great vacations this summer?

The grass is finally turning green!

I'm so excited! Almost overnight it seems the grass in my yard has turned green. This is the best time of the year for our family. I get to be outdoors and enjoy my flowers and my husbands business kicks into high gear. Now I have to wait patiently for my beautiful Lilac bush to bloom. Then my yard will be fill with the most beautiful scent of Lilac!

Purchasing a New Vehicle

Well, I spent all day yesterday with my husband at a local car dealership purchasing him a new work truck. I forgot how sneaky some salespeople can be. After spending hours trying to get them to come down on price we finally got a deal I felt good about. Why does buying a vehicle have to be so difficult?

Is Winter Ever Going To End!

I'm beginning to think winter is never going to end. I definitely have a bad case of cabin fever. My kiddo's are going bonkers having to stay indoors so much and it's starting to take it's toll on my cleaning effort. UGGH!! I worry that with an early Easter this year we will have to celebrate indoors this year instead of outside. With over 20 children in my family it's going to be crazy. My Cousin Was Shot In The MO City Hall Shooting.

This has been such a horrible and sad week. My cousin Todd was shot in the hand by an mentally unstable man who gunned down a police officer in the parking lot then entered City Hall in Kirkwood, MO and shot another police officer, 3 council members, the mayor and my cousin who is a newspaper journalist there reporting the city council meeting. The gunman was then shot and killed by police. I cannot believe that someone could become that upset that they would do so much harm to other human beings, especially my cousin who was just there reporting a story. I don't even want to imagine what might have happened if the shooters gun was aimed just a couple of inches closer. It feels so surreal that this has happened to one of my own family members. You see these horrible stories on the TV and you feel so upset and sad for the families but it never seems possible that something like this could affect your own family.

It's Hailing!

Yuck! What a drab and dark day. It snowed Thursday and my children were out of school Friday. Saturday the weather finally warmed up and all the snow melted but now today it's misting rain with hail! I'm not sure I have ever see so much hail arrive with so little rain. My husband and I raced to put our vehicle in the garage and I'm so glad we did because the yard has so much hail it looks like snow. My kiddo's are going stir crazy being stuck inside so we decided to build a big castle out of blocks. It been alot of fun but my living room has been over taken. LOL! I've always wanted to be the queen of my own castle and thanks to my children today I officially am. (-: So how has the weather been in your area?

It's been a long weekend. With the daytime highs only in the teens the kids have spent the whole weekend indoors. They were going stir crazy so we have played lots of board games and cards.
